How can chefs lead the way towards social justice in our food system?

It was never going to be enough for Chef Nick Wallace to only cook food, even as deeply as the passion to cook has driven his life and career. The Chopped chef is on a mission that includes shaping the way children, especially children of color, relate to and think about food.

Creativity Kitchen, Chef Wallace’s brainchild, was launched to integrate real, nutritious, local food into urban school cafeterias in the South and the appreciation for its importance into the minds and hearts of the children eating it. “We work with kids who may eat their only meal of the day at school.  By prompting them to think about where that food comes from, what it does for their body and how its production impacts the land, we try to instill a sense of agency that they will take into adulthood—a sense that they can choose what to put in their bodies with an understanding of the impacts of that choice,” Chef Wallace explains. ‘Fish on Fridays’: Chefs Collaborative shines the spotlight on underappreciated New England groundfish

Trash Fish Dinner Invitation Today’s ‘Fish on Friday’ post will be a little bit different. Rather than focusing on a single species or fisherman, we want to highlight a growing movement and event to celebrate lesser known fish species and support New England fishermen—who need the support now more than ever.

With substantial catch reductions looming for Atlantic cod and several other popular species, you might think that buying sustainable, local seafood would be more challenging than ever. However there are many other healthy fish populations in New England’s waters, and with a little creativity, they could become staples of your seafood repertoire.

Sometimes called “trash fish,” underutilized fish species such as redfish, hake, Atlantic pollock and sea robin, have long taken a back seat on fishing vessels and restaurant menus to more popular species, such as cod. But that doesn’t mean they aren’t worth your attention. Read More »

Fishermen and Chefs United: Keep Catch Shares On The Table

This week more than 100 fishermen, chefs and seafood distributors from around the country gathered in Washington, D.C. to talk with members of Congress about sustainable fishing and the need to keep catch shares in the tool box for our nation’s fisheries managers.

Recently, some in Congress have attempted to take catch shares off the table for fishery managers; limiting regional councils’ ability to make the best decision for their fishermen.

Catch shares help eliminate overfishing and restore fish stocks by dividing the total scientifically approved allowable catch among the fishermen and ending short seasons and derbies. Catch shares have been proven to recover fish populations, increase compliance with catch limits, reduce waste, stabilize revenue and increase business efficiency.

In more than 115 meetings, the fishermen and chefs stood together to make it clear that catch shares are working, they are making American fisheries more sustainable and they have had positive impacts not only on fishermen, but the seafood industry. Read More »
