Pancakes without Syrup?

I never got the facination with maple syrup, or other syrups. The best way to eat pancakes is pan-fried to a golden brown and then lightly buttered. Second best is silver-dollar pancakes which you roll around breakfast sausage.

Who doesn’t enjoy maple syrup on hot, buttery pancakes? Putting real, unadulterated syrup over a fresh stack of pancakes, with the addition of fresh fruit, is a true delight to me. However, the fact that global warming is shortening the production cycle of the sugar maple, in addition to the health of the trees, is criminal. The delicate balance of sap production, nurturing birds and other wildlife cause these amazing trees support an entire ecosystem.
The impact of the threat to maple trees is enormous. It will ruin a local community’s economy – which, in addition to the existing economy of our country, would be an anathema. More than the loss of maple syrup, if climate changes cause these trees to die off, it would be a tragedy of large proportions.
I sincerely hope that it isn't too late to reduce the effects of global warming. We need to use whatever it takes to reduce our carbon footprint so that we can heal the environment and restore the delicate balance of life.
